Lemon-Filled Coconut Cake 2008

This cake had three layers of coconut cake filled with a unique lemon filling. The cake was topped with a cooked frosting and then sprinkled with coconut. I made it for a work Christmas party and it was beautiful on the table. The coconut topping gave it a nice Christmas look. This cake was a big hit!
