Autumn Wedding Cake

When I decided to enter a cake in the Southern New Mexico State Fair, I knew I wanted to do an Autumn wedding cake. The orange roses are delicate and beautiful. They look amazing with the green fondant. Combining the round and square shapes with the quilted pattern makes a gorgeous modern cake. Oh and it won first place!

Fruit Basket 2010

This was a delicious chocolate cake for my father in-law. It really looks like fruit basket. A change of the ribbon can really change the mood of the cake. My father in-law is very political and patriotic so I wanted some thing Red, White, and Blue.

Sunflower Wafer Cake 2010

My niece shows a steer for 4H each year, and they like to provide a dessert for the buyer's luncheon. My sister let me do this beautiful fair time cake. No one wanted to cut into it at the luncheon. We think they gave it to the judge as a 'thank you'. I was honored.

Fish 2010

I was visiting my family out of state. My sister told me that her boy really wanted a fish birthday cake. So I started baking and my mom went to the store to buy some candy. I didn't have any of my cake decorating tools and there wasn't a lot of time, but I think it turned out cute. Levi liked it, which is most important.

This was a fun baby shower cake.
The cake is a lemon cake filled with a lemon/orange zest frosting. Yum!

This cake was truly a challenge, but I enjoy a challenge. I had the cake done a week early, but when I took it out of the freezer the day of the wedding and the fondant melted right off the cake. So I have learned how to defrost a cake in the middle of a New Mexico summer. At 3pm I ripped the fondant off and started over knowing the reception was at 7pm. Lucky for me I had some pre-made items that saved the cake. With more attention to detail this cake could be even more fabulous.

Fresh Peach Pie 2010

My Father In-Law Greg took my son to pick some peaches off of his peach trees. It was just enough to make peach pie. Nothing reminds me more of summer time than soft sweet peaches.

Fruit Pizza

One of my husband's favorite desserts is this wonder fruit pizza. On a baked sugar cookie is a thin layer of a cream cheese mixture. I cover the mixture with some of my favorite fruits. This one has strawberries, blue berries, black berries, and kiwi. I covered the fruit with a delicious orange glaze. Hmm Hmm Good!

The is a fondant cake with handmade fondant roses and ribbon. I got to do this cake for a church event, so I added the cake topper to insure the look of a 'wedding cake' since the theme was "The 10 Virgins." It was a beautiful program and I think the cake was a beautiful compliment to the decorations.

This square cake is so modern and simple. The fondant was so clean and beautiful. The simple ribbons and flowers add a nice sweetness.

This cake is covered in fondant and hand made fondant roses. The roses took a long time, but the end result is very rewarding. The beading, shells, and lace are covered in platinum dust, plus the roses are lightly brushed with it to give a little shimmer. I really love this cake. :)

Baby Blanket 2009

The cake was yummy. I did cake layers of white, cherry, and chocolate with a raspberry filling.

I wanted it to look like a baby quilt with a cute little lamp made of royal icing. The letters spell the baby's name... Parker. The ruffles are sweet and delicate.

I finished this cake on a Friday night and had my baby Chase the next day on Saturday.

Lemon-Filled Coconut Cake 2008

This cake had three layers of coconut cake filled with a unique lemon filling. The cake was topped with a cooked frosting and then sprinkled with coconut. I made it for a work Christmas party and it was beautiful on the table. The coconut topping gave it a nice Christmas look. This cake was a big hit!

Lemon Bars 2008

Lemon bars have been near the top of my Pregnant Cravings list for a while now. After cooking and baking for 2 day in preparation for Thanksgiving I couldn't get rid of the baking bug the day after Thanksgiving. It was the perfect time to make these delightful lemon bars. Another great dessert I got from my sister!

With some left over ganache I made these delicate truffles. They are covered with pecans, coco powder, powdered sugar, and coconut. Perfect for a holiday party.

This cake was inspired by my grooms cake from my wedding. So beautiful and so delicious. It was three separate cakes on three cake stands at different heights and sizes. Once I started making and decorating cakes I was very excited to try this one.

A friend's daughter saw my son's caterpillar cake and asked for one like it. I added an extra little oval cake to make sure there was enough for everybody. The sun turned out so cute.

While visiting my family out of state my nephew Levi wanted a cake of a man fishing in the mountains. It was a tall order, but I worked it out. Instead he got a fisherman overboard in the mountains. It was a hit!

This was my first wedding cake. The cake is a delicious carrot cake from my mom's recipes. I covered it with butter cream frosting. The piping turned out really beautiful, and the flowers are a nice touch of color.

These chocolate cupcakes filled with raspberry preserves are so yummy. The strawberry garnish not only looks good, but taste great.

This adorable cake can be changed by using boy or neutral colors. The baby face is so sweet. You can even see the baby's fingers holding on to the blanky.

Caterpillar 2008

This cake was for my oldest son's first birthday. He and his cousins were so excited to see this fun caterpillar cake. It is only a 5 serving cake, but I made sugar cookies to go with it. If it was for a big birthday party, I would instead use a large ball pan for each segment.
